Nasi Serai


NASI SERAI

Resepi Keluarga


Bahan

4 cawan beras basmathi - cuci bersih, rendam 30 minit, toskan
6 cawan air
2 helai daun pandan

Bahan tumis

1 sb rempah kurma.
2 biji bawang besar - dihiris
3 ulas bawang putih - dihiriskan.
1 inchi halia - dihiris
3 sb majerin.
sedikit rempah empat sekawan.{kulit kayu manis,buah pelaga,cengkih dan bunga lawang.
5 batang serai- dititik
bawang goreng untuk taburan
garam secukup rasa


Caranya

1. Panaskan majerin,didalam periok nasi,
2. Masukkam bawang yang dah dihiris,halia sehingga naik bau.
3. Masukkan rempah kurma yang dah dibancuh dgn air sedikit,serai,rempah empat sekawan,sehingga naik bau.
4. Masukkan air ,beras,daun pandan ,tanak sehingga masak.
5. Setelah masak taburkan dengan bawang goreng.

Pau Dough

Ingredients A
400g flour (Bluekey Pau flour or Hongkong flour)
240g water
1 1/2 tsp instant yeast

Ingredients B
100g flour (Bluekey/Hongkong flour)
120g caster sugar 10g shortening ( i used Crisco )
1 1/4 tsp double-acting baking powder

Method
1. Mix ingredients A together. Knead until smooth and elastic. Let it rise for 40 minutes.
2. Mix dough from method 1 with ingredients B and knead for another 10-15 minutes.
3. Cut into equal portions of 30g or 40g. Wrap in filling.
4. Let rise for 20 minutes.
5. Steam for 12 minutes.

Ingredients

2 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1 cup unsalted butter, cut into 1 tbsp. pcs.,
very cold 1/4-1/2 cup cold water

Directions

1.Put the flour, salt and sugar into a food processor and pulse once or twice.
2.Add the butter and process until the mixture looks grainy.
3.Then slowly, while pulsing, add the water until you can form the dough by pressing it between your fingers.
4.Decant the loose dough onto a piece of plastic wrap.
5.Using the wrap, fold the loose dough towards the middle and press with the back of your hands to form dough.
6.Split into two pieces and wrap each and chill for at least 4 hours before using.
7.Dough can be made ahead for up to one week.

INGREDIENTS

6 cups thinly sliced apples
1 tablespoon lemon juice (optional)
3/4 cup white sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg 1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)
1/2 cup all-purpose flour
1/2 cup packed brown sugar
3 tablespoons butter

DIRECTIONS

1. Preheat oven to 375 degrees F (190 degrees C).
2. Place sliced apples in a large bowl. Sprinkle with lemon juice if desired. In a small bowl, mix together white sugar, 2 tablespoons flour, cinnamon, and nutmeg. Sprinkle mixture over apples. Toss until apples are evenly coated. Stir in raisins and walnuts if desired. Spoon mixture into pastry shell.
3. In a small bowl mix together 1/2 cup flour and brown sugar. Cut in butter or margarine until mixture is crumbly. Sprinkle mixture over apple filling. Cover top loosely with aluminum foil.
4. Bake in preheated oven for 25 minutes. Remove foil and bake an additional 25 to 30 minutes, until top is golden brown. Cool on a wire rack.

Nasi Sayur



Nasi Sayur

3 cawan beras basmathi
4 ½ cawan air
½ cawan susu cair
1 cawan sayur campur
2 sb minyak sapi
1-2 sb minyak masak
3 helai daun pandan
Kayu manis 2 inci, bunga lawang 1, bunga cengkih 3, buah pelaga 2
Garam secukup rasa
Bawang goreng
Daun ketumbar
Hirisan badam (disangar)

Caranya

1. Beras dicuci bersih dan direndam setengah jam. Setelah itu toskan.
2. Masukkan air, susu cair, minyak sapi , minyak masak, daun pandan, rempah tumis 4 beradik dan garam ke dalam periuk nasi dan biarkan sehingga ia mendidih.
3. Masukkan beras dan sayur campur. Kacau rata dan biarkan masak seperti memasak nasi biasa.
4. Hidangkan dengan taburan bawang goreng, hirisan badam dan daun ketumbar.



Daging Masak Mamak

Bahan

1kg daging lembu (direbus sampai lembut)
2sbm serbuk cili kering (cap babas/allagapas)
1sk serbuk jintan putih 1sk serbuk sajira (btk spt jintan tapi mklang tak letak pun)
2 labu bawang besar dihiris bulat

Bahan kisar

3 inci halia
10 ulas bwg putih
10 ulas bwg merah
5 labu bwg besar

2 btg serai - titik
Daun kari
Daun pandan (simpulkan)
Daun pudina
3/4 cwn kicap manis
3 sb tomato puri
1cwn bwg goreng (tumbuk halus)
4 sekawan (bunga lawang/kulit kayu manis/buah pelaga/cengkih)

Cara

Panaskan minyak dan minyak sapi. Masukkan bhn kisar, 4 sekawan, daun pandan, serai, serbuk cili, jintan putih dan sajira...kacau dan biar hingga naik aromanya. Masukkan daging dan airnya sekali. Bila daging dah lembut dan rempah dah naik minyak, tambahkan bwg besar hiris, kicap, daun kari dan biarkan daging itu empuk sekejap. Masukkan tomato puri dan daun pudina . Tambahkan garam secukup rasa. Agak2 kuah dah naik kering, masukkan bawang goreng yg ditumbuk tadi utk pekatkan kuah.





Sayur Goreng Szechuan

15 ekor udang
2 batang celery stalk
½ batang lobak merah (hiris nipis)
½ tin cendawan butang (belah 2)
½ pokok bunga kobis
½ pokok brokoli
1 biji bawang besar (belah enam)
4 biji bawang putih (cincang)
6-8 batang cili kering (bilas dan gunting tiga setiap satu)
3-4 sb cuka hitam
2 sb kicap cair
Gula secukup rasa
Sedikit air

Caranya

1. Tumis cili kering dengan sedikit minyak sehingga garing (jangan sampai hitam/hangus).
2. Masukkan bawang putih, tumis sebentar dan masukkan udang.
3. Setelah udang ¾ masak, masukkan bawang besar dan diikuti dengan sayuran-sayuran lain..didahulukan sayur yang lambat masak dahulu. Gunakan sedikit air bila perlu.
4. Masukkan cuka hitam, kicap cair dan gula . Kacau rata. Matikan api setelah sayur ¾ masak. Hidang.

Tips – Campuran bahan-bahan perasa ini mesti ada rasa tajam cuka, masin dan manis yang rata.

Barbeque





Barbeque Sauce


1 bottle black pepper sauce of any brand

1/2 cup oyster sauce

1 tsp dried thyme

1 tsp dried rosemary

2 tbsp brown sugar


Mix all ingredients together. Coat sauce over meat and marinate for at least 2 hours.
